The University of Murcia (UMU) is a public university located in the Region of Murcia. The different faculties are located in five different campuses. More than 34,000 students are enrolled in the
University and the University has national and international acknowledgments. It belongs to the program Campus Mare Nostrum 37 /38, that is the International Excellence Campus for Higher Education an Research of the University of Murcia (UM) and the University of Cartagena (UPCT). The campus is a joint effort of international organizations, research centres, technology parks, companies and the administration, which seeks to transform the Region of Murcia into a pole of international, high-quality education, science, business and culture in the Mediterranean area.
The research group that coordinates this project, leaded by Dr. Encarna Gómez Plaza, has the technical experience to carry out and offer various types of physicalchemical and sensory analyzes of grapes, musts and wines, in accordance with official methods, and which apply both to the pre-fermentation stages of the wine, as well as those that affect fermentation and those that follow its completion, prior to making the appropriate corrections.
The University of Murcia also participates in different initiatives related to Industry 4.0. The University of Murcia and the Takasago company have come together to create the Takasago Industry and Maintenance 4.0 Chair with the aim of promoting research and knowledge dissemination activities in the field of industry and maintenance 4.0.
Encarna Gómez Plaza
Professor at the University of Murcia with expertise in wine science, food chemistry, post-harvest technology, food science, food biochemistry, anthocyanins, wine and flavonoids.
Project Coordinator & overall coordinator of the UMU team (overseeing administrative + technical excellence). Scientific leadership for WP2 and WP3 (overseeing the production process analysis and optimisation) and ensuring scientific/ technical excellence & correctness of the content in WP4 and WP6
Ana Belén Bautista Ortín
Professor at the University of Murcia with expertise in wine phenolic compounds, wine chemistry, oenology, chromatography, winemaking, tannins and anthocianins
Role and tasks: Implementation of scientific/ technical tasks in WP3 and communication with WP2, ensuring scientific/ technical excellence & correctness of the content in WP4 and WP6
Francisco López Gálvez
Professor at the University of Murcia with expertise in microbiology and phenolic compunds

Alejandro Martínez Moreno
Researcher at the University of Murcia with expertise in oenology, wine phenolic compounds, wine chemistry, winemaking, tannins and anthocianins.
Role and tasks: Implementation of scientific/ technical tasks in WP3, support to content creation and diffusion in WP4 and WP6.
Paula Pérez Porras
